Friday Favorites Take 2: Devilishly Good Hummus Eggs

Sometimes you just have a bad day. Last Sunday was a comedy of errors for me! I was seriously clumsy, dropped just about everything that touched my hands, almost did a serious butt plant when I slipped on something in the garage, and accidentally published this post for a date in the past. So, that’s why you may have seen this pop into your RSS reader on Sunday and, why I presume, you may have scratched your head since it was not at all Friday.

Please forgive me if you are seeing this twice, and now you have seen a peek behind magic curtain here at TKT – I sometimes write posts a few days in advance when the inspiration strikes. 😉 But, I do love this spin on “deviled” eggs, so when I was trying to decide if I would just delete the post and let it go into the dark shadows of the blogosphere, or, publish it on time as planned, I decided to publish, err…re-publish. So, that is why you are seeing take 2 of this Friday Favorite, a healthy spin on a popular holiday party tray staple, the deviled egg.

And with that, I wish you a happy weekend! I have my fingers crossed that the butter has worn off of them this weekend and I don’t have a clumsy repeat of last Sunday. 2Chili and I have a duathlon race tomorrow afternoon (our first time doing the same event at the same place…together).  The race is a sprint – run 1 mile, bike 11.5 miles and finish by running 1 mile, so nothing too major, but, I still need all the skills and balance I can get!

Healthy deviled eggs? Yes, Virginia, in addition to Santa Claus, there is definitely a healthy “deviled” egg.

Since the holiday season is upon us, I thought it was only fitting to share an adaptation on a common holiday party side dish for this Friday Favorite. I’m sure I am not the first person to think of this, but I have been replacing the traditional deviled eggs filling with hummus for some time, and really prefer it to traditional deviled eggs.

Hard boiled eggs + hummus = yummy!

This particular item is the first recipe I ever had published on the web, on a P90X nutrition blog, and it’s really a no-recipe kind of recipe: Hard boil a few eggs, remove the shell and the yolk, replace the traditional deviled egg filling with hummus and enjoy!

This is a nice protein-packed snack. 2 hard-boiled egg whites with a total of 2 tablespoons of Trader Joe’s Mediterranean hummus equals:

Fat: 4g
Cholesterol: 0mg
Sodium: 190mg
Carbohydrates: 6.7g
Fiber: 2g
Sugars: 1g
Protein: 10g
